The Liège waffle, explained
Three things that make it a Liège waffle.ThreethingsthatmakeitaLiègewaffle.
What is a Belgian Liège waffle?
Liège waffles, originating in the 18th century in Liège, Belgium, are often hailed as Europe's “Sugar Waffle.” These indulgent treats are crafted from a rich, brioche-like batter and studded with Belgian pearl sugar. The result is a delectably chewy interior, complemented by a crisp, caramelized exterior created by the melting sugar.
The secret is in the sugar.
Belgian pearl sugar is a unique product with a special production process. After purifying the juice from sugar beets, the sugar crystallizes into large, pearl-like clumps. In Belgian waffles it adds a crunchy texture and a slight caramelized sweetness when it melts during baking.
Original and gluten-free.
Both mixes are yeast-raised and include a pouch of imported Belgian pearl sugar. Choose the original, or the gluten-free version made with a rice, sorghum and tapioca flour blend. Either way, each bag yields approximately ten waffles.
"Bring the authentic taste of Belgium to your kitchen with our original Belgian Liège Waffle Mix. Crafted with premium ingredients, including imported Belgian pearl sugar, this mix creates rich, caramelized waffles with a soft, brioche-like texture. Each bag yields approximately 10 irresistible waffles.

That's what our customers call the sugar pearls. Harvested from sugar beets, crystallised into clumps, and stirred into the batter last so every waffle bakes with a caramelised crust.
About Wafel-Bitte
A mother, a daughter, and a recipe worth perfecting.Amother,adaughter,andarecipeworthperfecting.
In the early days of the COVID-19 pandemic in 2020, Bailey and her daughter Alexis sought a meaningful project during lockdown and decided to start a business together. Bailey, an experienced entrepreneur and Air Force veteran, wanted to teach Alexis how to turn an idea into reality before her enlistment. With Alexis's love for baking, they aimed to create something that would bring joy to others.
Having been stationed in Europe, they were familiar with the authentic taste and look of Belgian Liege Waffles. Noticing a lack of them in Madison, Alabama, they saw the perfect opportunity and began perfecting their recipe.

Questions? Answers.
Rising times, storage, waffle makers, and what to do with an expired yeast packet.
01How do I clean my waffle maker?
Because waffle makers differ, first refer to your manufacturer instructions. What we have found helpful is using a good pan spray on both sides of the waffle maker prior to adding the batter. Steam cleaning our waffle makers has been the most successful.
02How long does it take for the batter to rise when making a batch of Wafel-Bitte waffles?
It is best to let the batter rise for an hour and a half before cooking the waffles. You can also make the batter and let it rise overnight in the refrigerator. Cover it with plastic wrap making sure the wrap touches the top of the batter.
03What is the best way to store waffles for later?
Although best when fresh, waffles can be stored in an airtight container at room temperature for a day or two, for up to a week in the refrigerator, and longer in the freezer. When you are ready to eat them, we recommend reheating in a toaster oven or conventional oven at 275 degrees F for minutes until warm.
04What if the shelf life on my waffle mix bag has expired?
You can still use your mix, just replace the yeast packet with 2 teaspoons of active yeast.
05What if I don't have a Belgian waffle maker? Can I use a regular one?
Yes!
06What should my batter look like?
Your batter will be thick, no need to add water.
